More and more people now are changing their diets and turning to a plant-based diet or a vegan lifestyle including products that are made without non-vegan products and made cruelty-free. It is astounding that the number of vegans between 2014 and 2018 has quadrupled, with approximately 1.16% of the population eating and using plant-based products only, this compares to just 0.25% in 2014.

What is Veganism?

Veganism is defined as a way of living which excludes all forms of exploitation of, and cruelty to, animals for food, clothing or any other purpose. Someone is vegan will avoid not only animal-derived products, but clothing and shoes that contain leather and fur, and beauty products that have been tested on animals.

Why Choose a Vegan Lifestyle?

Many people choose to become vegan for many different reasons including:

  1. A greater awareness of the impact it has on the environment
  2. The ethics of animal cruelty
  3. Improve overall health
  4. A combination of all three

What is a Vegan Diet?

Vegans don’t eat and use anything that comes from an animal or that has been tested on an animal. They don’t eat meat or fish or anything that contains dairy products including; eggs, milk, cheese, yoghurt and other products that have animal origins or animal ingredients. Gelatin, beeswax and products for which animal testing is done are also avoided.

Years ago being a vegan would have taken a lot of planning and preparation, however as it has become more popular there is now a wide variety of substitute meats, cheeses, milk and other products easily available in our UK supermarkets.

Is being Vegan good for your health?

Increasing your intake of fruit and vegetables will always help your health as with any diet a vegan diet should be varied and well planned to ensure you still have the right nutrients, vitamins and the things your body needs to remain healthy and active. Being 100% vegan is not for everyone, however, changing to a more plant-based diet is good for a healthy balance. Intensive farming and poor soil quality can mean that people who eat a plant-based diet will not get the B12 they need for proper cell function unless they are eating foods that are fortified with vitamin B12. B12 is a water-soluble vitamin that a human body needs to function properly and the Dutch Society for Veganism advises anyone who eats a vegan diet to take a vitamin B12 supplement in addition to their diet.

Why Vegan Ice Cream Recipes and Vegan Options are Good for Commercial Kitchens?

Being in the restaurant business you now need to be able to offer a range of food and beverages that offer alternatives for people who choose to be vegetarian or vegan, or if they have allergies or conditions that mean you can’t eat certain food types.

Vegan ice cream is ice cream that is made without any kind of dairy products and you won’t believe it but it is actually delicious.

A lot of people use coconut milk and for some, it is the preferred option to using almond or soya milk. Full-fat canned coconut milk gives a great texture, fullness and creaminess and if you use it as a base to your ice cream you can add other flavours and ingredients.

You can also make vegan no-churn ice cream which is making ice cream from frozen bananas which are blended into soft serve ice cream and other vegan ingredients added to make it a different flavour and give it texture.

It’s really simple you can use the ingredients detailed for each ice cream and adapt them to suit your Carpigiani Commercial Ice cream Maker to substitute non-vegan products and make delicious ice cream alternatives for your customers.

Oreo Vegan Ice Cream

  • Frozen bananas
  • Oreo cookies
  • Chunky peanut butter
  • Peanuts

Chocolate Vegan Ice Cream

  • Sweetener. Personally, I think 2 tablespoons of maple syrup (or honey, agave, etc.) is just perfect, but anywhere from 1-4 tablespoons is delicious. Coconut milk is naturally sweet so you don’t need a lot.
  • Cacao or cocoa. Cacao powder is my preference, but either is fine. Or even carob!
  • With collagen. I like to add a couple of scoops of collagen peptides, but skip this if you are vegan. I don’t recommend other protein powders as they will mess up the creamy texture.
  • Thickener. I have found tapioca starch to work best, but you can substitute with arrowroot or cornstarch.
  • Gum-free coconut milk. I typically use Trader Joe’s full-fat coconut milk, which doesn’t contain guar gum. Using a brand with guar gum will make it even creamier, but not necessary.
  • Make it nut-free. Use hemp milk, soy milk, or light coconut milk in place of the almond milk, and you’ve got dairy-free + nut-free ice cream.

Strawberry Vegan Ice Cream (No Churn, Dairy-Free, No Added Sugar)

  • 1 (1.3 pounds/21 ounces) bag frozen strawberries
  • 1 (13.5 ounces) can full-fat coconut milk (at room temperature)

Birthday Cake Vanilla Vegan Ice Cream

  • raw cashews
  • canned “lite” coconut milk
  • pure maple syrup
  • vanilla extract
  • yukon gold potato
  • apple cider vinegar
  • lemon juice
  • sprinkles

Mango Vegan Ice Cream

  • 24 oz. frozen mango chunks
  • 1-2 (5.3 oz) containers Silk® Vanilla Almond Dairy-Free Yogurt Alternative
  • 10 oz. frozen raspberries

Chocolate Chunk Beet Vegan Ice Cream

  • 18 oz cooked beets
  • 1 cup thick coconut milk (full fat)
  • 1/4 cup agave
  • 1 piece ginger (about 0.8 inches long)
  • 3 tablespoons chopped dark chocolate

Watermelon Mint Vegan Ice Cream

  • 1 cup (225g) coconut cream*
  • 5 cups (500g) frozen watermelon
  • A handful of fresh mint
  • 2 tbsp (40g) maple syrup (optional)
  • Pinch of salt

Gluten-Free Black Forest Vegan Ice Cream

  • 22 ounces full fat coconut milk I used two containers of So Delicious Culinary Coconut Milk
  • 1/2 cup maple syrup
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups sweet cherries pitted and sliced in half
  • 8 gluten-free chocolate cookies I used Enjoy Life Crunchy Double Chocolate Cookies
  • 2 Tablespoons vegan buttery spread melted

No-Churn Pistachio Vegan Ice Cream

  • 2 1/2 cups non-dairy milk (I used cashew))
  • 1 large avocado
  • 1 cup unsalted pistachios, shells removed
  • 1 cup Medjool dates
  • Optional: 1/2 tsp almond extract
  • Optional: 1/4 tsp spirulina (for colour)

Chocolate Brownie Vegan Ice Cream

  • 1 cup raw cashews, soaked overnight and drained
  • ⅓ cup maple syrup
  • 1.5 cups full-fat coconut milk
  • 3 heaped tbsp cacao powder
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • RAW BROWNIE DOUGH
  • 8 Medjool dates
  • 1 tbsp coconut oil
  • 3 tbsp cacao powder
