A Blast Chiller or Shock Freezer has become an essential part in improving the production of ice cream & especially Artisan Gelato.
Blast Chillers and Shock freezers are designed to quickly, and hygienically take down the temperature of the gelato for displaying, storing and increasing the shelf life of the product at the maintained consistency. The speed in which it does this ensures the structure, consistency and properties of the ice cream (including flavour) are maintained.
Blast Freezers have a significant role in the production of really good quality Artisan Gelato. Essentially the role of the blast freezer is too very quickly reduce the temperature of the ice cream, hardening it's structure.
Most ice cream machines dispense the ice cream at -7/-8°C (where only 50% of the water has turned into ice). To effectively display ice cream, this needs to be -14°C and if storing in a freezer this needs to be -18°C.
The speed at which this freezes down ensures the ice cream's structure is set, it maintains it's consistency and also the optimum level of overrun required.
