When setting up the new store in The Glassworks, Charlie visited the Ice Cream Show in Harrogate for inspiration. There she came across Carpigiani and after discussing what she wanted to achieve, the team put together a demonstration of all of the equipment and advised how they could help to set up the shop with all the equipment that would be needed.
“We make everything in-house. All our gelato is made right here, and we come up with all the recipes too. We have about 50 flavours at any one time, and we use our Carpigiani Pastomaster 60 HE before putting the mix into the batch freezer, the Labo 30 45 XPL P. One of my favourite things about the batch freezer is the inbuilt hose, it just pulls out of the machine, and you hose down all the parts, it makes cleaning really, really quick, and easy, which is brilliant when you have loads of pans of gelato to make. We also have a 191 for our Mr Whippy style soft serve, for our shakes and waffles plus, my all time favourite bit of kit, the dessert station. This holds all of our toppings for shakes, waffles, cones, everything, so it’s easy to access the different toppings. Underneath is a refrigerated unit that stores our stock of toppings but… because it’s refrigerated, it keeps the toppings in the pans cool, so in Summer, they won’t melt and that is a massive bonus for us. It’s also brilliant because it helps to upsell customers. They see all the toppings in the pans, and they want to add on their favourites, so it really does drive sales for us. It’s been brilliant working with Carpigiani, we wouldn’t have been able to open the shop and run as we do without their equipment.”
